Roasted Corn Dip and Sangria

Roasted Corn Dip inspired by Three Bridges at Coronado Springs

While doing research for our trip, we heard wonderful things about Three Bridges at Coronado Springs resort, and it did not disappoint! When we visited, we joined the waitlist through the My Disney Experience app, and were seated immediately when we arrived! We chose to sit on the patio overlooking the water, a beautiful view. Our server recommended several appetizers, and we chose the Roasted Corn Dip! This plant-based dish is made with corn, smoked tomato “aioli,” tajin spice, and vegan parmesan cheese, served with corn tortilla chips. It was gone in a matter of minutes! The dip was creamy and perfectly spiced. We loved it so much, we wanted to recreate it at home! The end of corn season is rapidly approaching, so we knew we had to act fast. There was no existing recipe for this dip, but we think this one is pretty close!





Three Bridges is also known for their sangria! We chose the sangria flight, which included pours of rosado (rose), tinto (red), espumoso (sparkling) and blanco (white) sangria. Our favorites were the red and sparkling, so we chose to make those here at home to bring us back to that lovely waterside experience! Three Bridges has offered sangria classes in the past, so we were able to find the type of wines that are used in each one. We made a few substitutions with liquor using what we had available, but they tasted just as delicious!
