Tonga Toast

Aloha! In celebration of National French Toast Day, we made Disney's legendary Tonga Toast! This combination of cinnamon-sugar and banana goodness is found at the Polynesian Resort. We had it at the Kona Cafe, but you can also order it at Captain Cook's! This breakfast item is a must try while at Disney World. We fueled up at this resort prior to heading to Epcot for a day of *imbibing* around the world, and the Tonga toast paired with the Big Kahuna breakfast certainly did the job!


Disney's recipe uses sourdough bread, but we substituted brioche and dare we say, it was BETTER than the version at the Poly. It turned out so soft and delicious. Each thick slice of bread is stuffed with bananas, soaked in a milk and egg mixture before frying and sprinkled with plenty of cinnamon-sugar. We finished it off with a strawberry compote, which adds the perfect touch of tartness.

We paired the main dish with a side of fried spam (of course), POG juice, and Kona coffee! We created our own juice using equal parts orange, passionfruit, and guava juices. To keep it authentic, we had to have Joffrey's brand coffee. We can almost smell that wonderful Poly lobby scent!
